The goat is a family of creamy cheese, soft or semi-hard cheese, made from goat's milk and are a traditional product of different Italian regions.
In ancient times the goat farm and the production of goat cheese occurred only in areas otherwise not exploitable. This has justified the use of an increasing proportion of cow's milk, until the complete replacement of the goat milk: despite the name, in the twenty-first century the alleged goat cheese is actually cow's milk unless otherwise specified on the label.
Over the past decade there has been an increase in the production of these cheeses with new herds of goats and dairies made with the latest technology to ensure the product's traditional.
In addition to the production of cheese it was also introduced a low-fat yogurt high digestibility.
